This year’s theme is country western – everything from your clothing to your food to the music provided to the scheduled events will reflect country western, as we know it today.   It is our hope we can share the true SKIP MOTTO reflecting a “Special Kind of People” enjoying a special kind of time at a special place.

June 17    Fathers' Day dinner was served to honor the men in our lives, a delicious repast of baked chicken.

June 6     The Women's Welcome Coffee was held by Rachel and the Crew, and Rachel's daughter, Julie, was there to help bake and serve. too.  And what a Spread we were welcomed with!  Freshly baked scones of several varieties with jams and sour cream, pastries, cookies!  It was lavish, beautiful and decorated very prettily, too.  A surprise and anonymous gift to us all was a beautiful floral display to welcome the ladies back!

June 5    The Men's Welcome Coffee was held by Rachel and the Crew to welcome home the travelers who'd been away for the fall and winter.  Doughnuts and coffee were enjoyed and appreciated by the fellers.

Thursday, May 24, 2007 Landscape Day

 The Landscape Committee resumed our Thursday morning gatherings in late March this year, and in April the Kitchen Angels began to serve luncheons again.  The rewards for a filling, nourishing and delicious meal after working outside for several hours are not only obvious, but are hugely welcomed!  Betty and Larry Grewell are the Head Angels, and the ones who take turns flapping their wings in the kitchen are Dorie Anderson, Nancy Patnode and Lois Holley.  Of course, the Archangel Rachel is always on hand, too!  Today we had a big turn out of volunteers working on making and keeping our Park looking beautiful doing weeding  and clean up, plus the Mighty Men on the Mowing Machines.
Work continues cleaning up the drain field, which has been newly filled in, and ridding it of roots and rocks so that the seeding and mulching can be done.  Nancy, Rachel and Lois fixed a big pot of spaghetti, served with hot bread and lemonade, and there were freshly baked chocolate cookies for dessert.  There were over 20 hungry and happy volunteers fed today!  We love our Park!

Mothers' Day Breakfast.

Gene Bottomley coordinated some of the men to put on this lovely breakfast for the Moms.  We had pancakes, sausage,  juice,  and a Red Carnation was given to every lady present!  Ladies' breakfasts were free, but the guys had to pay.  Among the men on Gene's crew were Dick Koeb, Wil Young, Marlin Morrison, Van York, Don Schoenecker, John Coulter, Carl Turner, Don Manderfield and Jack Yates.  We ladies were meant to feel honored and special and well cared for....and we all did!  Thanks and kudos to all of you fellas for treating us so well!  And, a very special "Thank You to Gene Bottomley", who organized this event for us.

Cinco de Mayo Mexican Pot Luck, Friday, May 4, 2007
 

!Hola!  For this Fiesta we combined the usual Friday evening Pot Luck with assistance from Rachel and the Kitchen Crew. The Club House was splendidly decorated and looked very festive, with the artistic endeavors of Elsie Turner, Kaak Crawford and others. What a marvelous array of sumptuous  goodies we had to choose from!  We began with Margaritas, of course, poured by Carl Turner. There must have been at least 45 people present, and the tables were groaning under the weight of enchiladas, taco salads, corn bread, tamale pies, chile varieties, salads, desserts, including flan.

  I hope you all realize that the Corporation provides not uno peso for events such as this, Nada!, or for any of the Club house activities throughout the year.  For the Pot Lucks, we put out a donation jar to help defray the cost of paper cups and napkins, salt and pepper, butter and coffee.  And, we all pay for meals that are put on by the Kitchen Crew.  This information is for those who are missing out, but think they may be paying for the parties we have up here, while they are away in the southlands!

Easter

We had a memorable Easter celebratory dinner, thanks to Rachel and her indefatigable crew.  They were just back the day before from a two week cruise to Mexico, and didn't get home until very late.  They pulled it off, despite any remnants of weariness, and produced their usual excellent banquet.  We had a choice of roast lamb or ham---or both---, a salad of mixed baby spring greens, rolls and butter, mashed potatoes and
gravy, mixed vegetables, and two beautiful frosted cakes. 

Again, with the latter, a choice of carrot, chocolate---or both---!  This Park must
surely rank among the entire USA as the best fed!

Ladies Luncheon

Sadie Lahey is the organizer for the Evergreen Coho SKP Park Ladies' Luncheons, which are held monthly during the off season months.  The most recent was at the Timberhouse Restaurant in Quilcene, on April 18. 
The restaurant is located at the foot of Mount Walker and is a restored loggers' lodge, dating from the early 20th century. There are many interesting historical artifacts used as decorations. It is a beautiful setting among the tall forest evergreen fir trees.  The ride over  from Chimacum winds along the lush pastures of the valley, and is framed by wooded ridges.  We ran into a blinding hail storm, however....which is a bit out of the ordinary for April.  The food at the Timberhouse is very good, the service was excellent and very warm and friendly.  They are open every day for lunch and dinner, and there is a Sunday brunch, as well.  If you're lucky enough to be visiting the PNW this summer or fall, it would be a good destination for a leisurely meal!

St. Patrick's Day

 

Wearin' o' the Green at Evergreen Coho


Wonderfully succulent corned beef was prepared  for our SKP Park St.
Pat's Day dinner by Rachel, Marge and Gene Irthum, Pat and Bud Clausen
and Judy Slawson!  The salad was a green and  savory jellied composition
and the beer was green, too.  Steamed potatoes and carrots and cabbage

accompanied the corned beef, and also creamed horse radish.  A fine dessert of bread pudding with whipped cream rounded out our festive meal, and we all went home sated and content.

Ed and Charlene Cates sent me an Irish joke, which I'll now pass along to you all:

Paddy was driving down the street in a sweat because he had an important
meeting to attend and he couldn't find a parking place.  Looking up to
heaven he said, "Lord take pity on me!  If you'll find me a parking
space so I won't be late for my meeting, I'll go to Mass every Sunday
for the rest of me life, and I'll give up me Irish whiskey!".

Just then a car scooted out from the curb and a parking spot was
miraculously available.

Paddy looked up at the sky again and said, "Never mind...I just found
one.".

Valentine's Day 2007

 

VALENTINES' DAY AT EVERGREEN COHO

Our celebration  of Sweet Hearts Day was a triple header this year.  In
addition to being the day for all lovers to smooch and snuggle, it was
Sadie Lahey's birthday and the 7th wedding anniversary of Carl and Elsie
Turner!  They were married here in the year 2000, and I was told that
theirs was the first wedding ceremony to be held at the SKP Park.  The
Laheys and the Turners each provided a big cake for our dessert
delectation,  and champagne glasses were filled for toasting the two
couples. The Club House was decorated with frilly, white paper doilies,
lots of red paper hearts and Cupids, and chocolate candies were
abundantly strewn over the surface of each table.  Rachel and the
Kitchen Crew had prepared a marvelous dinner of Roast Loin of Pork,
creamed onions (I love these!) , applesauce, mashed potatoes and green
beans.  They also provided the (FREE!) champagne.  It was a memorable

 Friday Evenings at the SKP Park

 Spring, summer, autumn and winter, and with yet another spring yet to come, members and guests have been gathering at the Club House to meet and share food together in our community.

At some time, back in the late years of the past century, legend has it that a visitor and his wife lit a fire in the BBQ out in the Gazebo to cook their evening repast of hot dogs.  The smell of wood and sizzling meat brought others there to join them.  That summer the Friday BBQ Pot Luck was born!

Carl and Elsie Turner had been part of this growing tradition and took it over themselves as Host and Hostess around 2001.  Carl would start the wood fire around 4:30, and that would draw people in with their individual meats to grill, their dishes to share, their own wine and table set ups, and the makings of a party were all there! 

Around 2003 or '04 Gene and Lois Holly transitioned in as the new Host and Hostess.  By now, this Friday gathering had become an established Tradition!  Unfortunately, the names of the aforesaid visitors had been lost in the mists of forgetfulness, and no one can remember who they were.  Lois and Gene have continued their roles as Host/Hostess ever since. 

The summer and early fall of 2006 continued as in the previous years.  The Fridays were reliably sunny and warm; the attendance was enthusiastic.  The food brought to share was always toothsome and eclectic, although we couldn't be sure of the menu being balanced.  One Friday there was only one dessert; the following Friday there were eleven sweet offerings!  But, folks had an arena to show off their cooking specialties, and every one was able to taste all of the varied and delicious culinary offerings.  All of the foods were consumed with enthusiasm and appreciation.  Many recipes were shared, as well as new friendships made. 

The Friday BBQ's were supposed to end after Labor Day, but the weather continued to be mild and sunny...perfect late afternoons/evenings for alfresco dining.  Gene maintained, "When Lois and I get here and there Is only one other couple for dinner, then that is the last gathering"?

That didn't happen!  We continued on well into October, with enthusiastic diners and perfect weather!  We decided to have a moveable feast.  We would move the gathering inside, with Rachel's permission and the Club House scheduling permitting, to a Friday Indoor Pot Luck.  Gene said that it was time for some one else to manage the logistics for the winter, and that is when Wil and I took up the mantles of Host and Hostess in late October.

The inside Pot Lucks have been very successful!  There have always been around at least twenty folks present.  We have a sign up sheet for main dishes, vegetable dishes, salads and desserts.  At times a few more people have come in at the last minute, and there's always been enough to share.  After the weather turned chilly and the fire place was again operational, we began to arrange the tables into a horse shoe formation in front of the fire.  That has made the gathering seem closer and more like a family party.

In the spring, when the warmer weather becomes more conducive to eating outside again, we'll be meeting once more in the Gazebo for Bring-Your-Own steak, hot dogs and grilled chicken, and a dish to share.  Isn't it nice to have this seasonal option!  Come and join us!
