Council House Cafe Mississippi Mud Cake
1 cup butter Pinch of salt
1/2 cup cocoa 1 1/2 cups chopped pecans
2 cups sugar  1 teaspoon vanilla
4 eggs, slightly beaten  1 1/2 cups miniature marshmallows
1 1/3 cups flour

Preheat oven to 300 degrees. Melt butter and cocoa together. Remove from heat and stir
in sugar and eggs and mix well. Add flour, salt, pecans and vanilla. Beat for about 2
minutes. Pour batter into a greased 13 x 9 x 2" pan and bake for 35 minutes. Sprinkle
on marshmallows while cake is still warm. Cover with frosting after about 20 minutes
of cooling.

Frosting:
1/2 cup butter 1 box confectioner's sugar
6 Tablespoons coke or coffee 1 cup chopped pecans
3 Tablespoons cocoa

Mix all and pour over slightly cooled cake.

Taco Salad

Ingredients:
1/2 head lettuce; washed, drained and shredded or cut into small pieces
1 or 2 diced tomatoes
1 lb. cooked, drained and cooled ground beef
1 8oz. package of shredded sharp cheddar cheese
1 to 1 1/2 bottles Catalina dressing (you may use more if you like the salad wetter)
1 medium bag crushed Doritos.  Any brand of tortilla chips that are seasoned will also do.

In a large bowl mix the lettuce, tomatoes, ground beef and cheese.  ***Just before serving:  add the Catalina dressing and crushed Doritos to the portion you will eat now, in case there are leftovers.   Enjoy!!

The chips will get soggy if you add the dressing and chips too soon before you eat.

German Potato Salad

For eight servings (Enough for 3 to 4 days for two people)

5 pounds small, red potatoes - sliced very thin. (use old fashioned slicer)
Chopped chives (freeze dried)
2 good size onions
3/4 cup oil
1/4 cup cider vinegar
salt and pepper to taste

Potatoes should come out shiny but not drippy.  Different lots can make a
difference in the amount of dressing needed but do not vary the proportions
of 3/4 to 1/4.
